【Botanical Origin】
Swim bladders of Pseudosciaena crocea (Rich.), Pseudosciaena crocea (Rich.) or the sturgeon family animals such as Chinese sturgeon, and Kaluga Acipenser sinensis Gray, Huso dauricus Georgi etc.
【Characteristics】
The dried swim bladders are mostly pressed into oblong thin slices, light yellow in color, keratinous, and slightly glossy. Yellow croaker swim bladders are relatively small, while sturgeon and Kaluga swim bladders are large, with two pendant strips attached. The texture is firm and tough, not easily torn, and the fractured surface is fibrous. It swells easily in water, and almost completely dissolves when boiled. The thick solution congeals into a jelly after cooling, and is very sticky. It has a slightly fishy smell and a mild taste.
