The dried inner wall of the gizzard of the Gallus gallus domesticus Brisson of the Phasianidae family.
【Characteristics】
It is a regularly long oval-shaped sheet with obvious wavy wrinkles, about 5cm long and 3cm wide. The surface is golden yellow, yellowish-brown, or yellowish-green, thin and translucent. It is brittle and easily broken, and the fracture surface is gelatinous and shiny. It has a slightly fishy smell and a faint bitter taste.
Stir-fried Ji Nei Jin: The surface is obviously bulging, the edges are slightly curled, and the surface is yellowish-brown. Vinegar-processed Ji Nei Jin: Slightly vinegary.

【Identification】
The best quality is dry, complete, large, yellow, thin-skinned, unbroken, and with obvious ring-like protrusions.
Ji Nei Jin is sometimes mixed with duck gizzard lining. The main differences are: Ji Nei Jin skin is soft and thin, easy to tear off, so it is mostly complete with two halves connected, yellow or yellow-green, with ring-like protrusions. Duck gizzard lining skin is hard and not easy to tear into a complete oval shape, mostly disc-shaped, dark green, with fewer and less obvious wrinkles, the fracture surface is thicker and dull, mostly in broken pieces, the color is dark black-green, and there are no ring-like protrusions. Goose gizzard lining is mostly round or broken pieces, yellowish-white, smooth and dull.
